Mango Salsa
One of my favorite summer treats is Mango Salsa. Inspired by some other homeschooling blogs, I thought I’d share my recipe and some (dreary) photos:
For this batch, I used one very ripe mango, most of a medium cuke, 1 small white onion, half a lime, half a seeded jalapeno and a wad of cilantro. First, I peel and seed the cuke, then dice it. Add the diced onion. Then the minced wad of cilantro. Then squeeze half a lime and mix it all up.
The reason you push it all to one side is that all those ingredients should equal the amount of diced mango you add.
Then you add the jalapeno and stir it all up. I let mine hang out in the fridge to get all the flavor melding.
Then I get out a fresh bag of El Milagro corn chips and go to town.

Yum, that is my favorite salsa. Except I hate peeling mangoes…
New comment on an old post…we made this mango salsa tonight (it’s too hot to make anything else), paired it with tomato salsa and another small salad, and that was that. Chips of course. Delicious. Thanks for the recipe.
We’ll definitely make it again.
